Berry-picking Season Is Over (2010-08-26)
KL ate most of the fruit with his cereal and I also used a bunch of
them in a dish I made up. It was surprisingly yummy and you might
like to try if you also have a glut of berries from your garden.
Pork Chops with Boysenberry Sauce (serves 2)
- Salt and pepper two pork chops, dust with flour, pan fry till
almost cooked. Remove from pan, set aside.
- In same pan, saute some chopped onion, add a splash of white wine, chicken stock, a handful of boysenberries (or blackberries), 1/2 tsp mustard, and honey till berries break down and sauce is almost reduced.
- Return pork chops to sauce and cook for a couple more minutes
till they are fully cooked.
- Taste and season sauce.
You can add a pat of cold butter to finished sauce (heat off) for a more shiny and smooth sauce if you prefer.
